Food Preservation and Safety

OSU Extension Service offers help to ensure home food preparation and preservation is done safely and effectively.

  • For Food Safety and Food Preservation questions, call the state hotline at 1-800-354-7319, Monday thru Thursday, 9:00am to 4:00pm (July 14 thru Sept. 30, 2008).

  • Master Food Preserver Training . . . Registration & fees are due now! Next class starts Tuesday, September 2, 2008.  We are proud to announce the next training program series for you to become a Master Food Preserver. MFP's are Extension Service volunteers assisting county and state Extension staff with answering food preservation and food safety calls.  They work as "local food preservation resources" in the community conducting workshops & demonstrations, testing pressure canner gauges, staffing information booths and volunteering at local food pantry sites providing recipes featuring under-utilized foods and answering food preparation questions. In Douglas County, MFP's sponsor the popular educational cooking series of "In the Kitchen" and "What's for Dinner?" (see below for future programs). To find out more about becoming a Master Food Preserver and the next class, click on the pdf's below. Registrations and payments for the limited class size of 24 are due NOW

Saturday, September 6, 10:00 a.m.-12:30 p.m. Saturday canning session: poultry, beef, elk, venison. Bring canner gauges to class for free accuracy testing.
Thursday, October 9, 10:00 a.m.-12:30 p.m. The Great Pumpkin Day! Discover many aspects of pumpkins including fun carving, making pumpkin soup and pumpkin butter, roasted seeds, and simple & specialty desserts.
Saturday, November 8, 10:00 a.m. - 12:30 p.m. Saturday canning session: Apples, chutney, nuts, mincemeats, and products for holiday gift giving
Saturday, December 6,1 0:00 a.m. - 12:30 p.m. Saturday session for canning/preserving and gift making: Liqueurs, flavored vinegars, herbal jellies, and more!

Fees for each class: $15.00. Please pre-register with payment. Class sizes are limited to 30.

Thursday, July 24, 11:30 a.m. - 1:30 p.m Guest Chef Dave Pedotti owner of Pedotti's Italian Restaurant. Dave and Renie will demo Italian to feed and entertain us. Limited to 24. Pre-register and pay at Extension office (click for registration form) no later than Tuesday, July 22.  Do not wait, this class fills quickly!
Thursday, August 21, 11:00 a.m. - 2:00 p.m Keen On Zucchini  featuring that summer squash in everything we serve.

Zucchini is such a versatile vegetable. The menu will include soup through dessert!
Please pre-register and pay no later than Tuesday, August 19th. 
Thursday, September 11, 11:30 a.m. - 1:30 p.m Mediterranean Madness!  with Italian Bruschetta, Spanish Gazpacho, Moroccan Stuffed Bell Peppers, Eggplant Parmingiana, Fresh Fruit Desserts.  Registration and payment of this class fee are due no later than Tuesday, September 9th by 5:00 pm. (click for registration form)

  • Pressure Canner Lid Testing
    Free testing every 1st and 3rd Thursday starting in July and ending in October. Bring your canner lid to the Douglas County Office, Kitchen Conference Room between 10 a.m. to 2 p.m. (office is located at 1134 S.E. Douglas in Roseburg). Click here for more details, or call 541-672-4461.
