Favorite Fruit Clafouti

I had a wonderful cherry crop this year (I beat out the squirrels) and was looking for this recipe, which I used to make quite often and hadn't in awhile to try with the sweet cherries. I had typically made it with berries but the cherries worked very nicely. Blueberries are just starting to get ripe so will try them next. ENJOY!

FAVORITE FRUIT CLAFOUTI

4 Large Egg Whites -- Slightly Beaten
2 Large Eggs -- Slightly Beaten
1/3 Cup Granulated Sugar
3 Tablespoons Honey
2 Tablespoons Fruit-Flavored Liqueur
1 Teaspoon Vanilla
1 Cup Yogurt
1 Cup Flour
3 Cups Berries/Cherrys -- Rasberries, Blueberries, Strawberries
2 Teaspoons Powdered Sugar
  Dash Salt

 



In a large bowl beat together egg whites, eggs, granulated sugar, honey, liqueur, vanilla, and salt with a wire whisk or an electric mixer on low speed till light and frothy. Stir in yogurt till mixture is smooth. Add flour; beat till combined and mixture is smooth.

Grease a 10 inch quiche dish; arrange desired berries in bottom of dish. Pour batter over fruit. Bake in a 375 degree oven for 30 to 35 minutes. Serve warm; just before serving, sprinkle with powdered sugar and if desired, garnish with additional berries and/or edible flowers.

NOTES : This is a very fresh tasting desert and pretty low in calories and fat. Have made it mostly with raspberries.
