Test your balance. Stand straight, wearing flat shoes that support your feet. Cross your arms over your chest. Raise one leg and bend that knee. Close your eyes and start counting second. (Have sturdy furniture nearby to steady yourself.) Stop counting if you uncross your arms, tilt far sideways, or move your standing leg. Practice two days each week.
Kids Can open cans and rinse the veggies. If they are ready to use knives, teach them to chop on a cutting board by cutting down and away from their body. Keep their fingers away from the sharp edge of the knife. If possible, use a knife with a handle that is comfortable in their hand.
Cowboy Salad
2 - 15 ounce cans black-eyed peas or black beans
1 - 15 ounce can corn
1 small bunch of cilantro
3 medium tomatoes
1 avocado
1 tablespoon canola or vegetable oil
2 tablespoons vinegar or lime juice
salt and pepper to taste
  • Drain and rinse the black-eyed peas (or black beans) and corn.
  • Finely chop the cilantro and green onions.
  • Dice the tomatoes and avocado.
  • Combine all ingredients in a large bowl.
  • Mix oil, vinegar (or lime juice), and salt and pepper together in a small bowl.
  • Pour oil mixture over salad ingredients and toss lightly
  • Serve with your favorite meal or as a snack with tortillas.
Makes 12 servings, 1/2 cup each.
Tip: Try adding other vegetables, such as sweet or hot peppers or zucchini.
