How can I happily and healthily handle my hazelnuts, huh?

Q:

How do I process my hazelnut crop?

A:

There is a wonderful Extension publication that you can download that will give you all the information you need. In the mean time just harvest the nuts as they fall and put them in onion sacks or on a screen to dry. You can tell if they are dry when they rattle. When you crack them open the nuts will be a white color and as they dry they turn creamy in color. After they are dried you can roast them if you like or you can freeze them for later use.

If you have further questions you can call the OSU Extension Food Preservation Hotline 1-800-354-7319. The hotline is being staffed by Douglas and Lane County Master Food Preservers.
