Preserve our squash!

I can't find any recipe for canning zucchini. Pressure canned or water bath. Is it not recommended? - Columbia County

Unfortunately, it is not recommended to can zucchini or summer squash. There are not safe processing times for doing this in either a pressure canner or water bath canner. However, there are safe recipes for pickling, freezing, or drying zucchini. I would recommend finding one of those recipes from the trusted resources below:

Look for the Pickles section. They have a bread and butter pickled zucchini recipe.
