Too late for more peas?

Knowing peas don't mind cool weather can I get a fall crop if planted at Labor Day or so?

You have a good chance for fall peas. Plant as soon as possible in your coolest site. Refrigerating the peas ahead or even starting them ahead will give you a jump. Select shell peas as they do not take as long. Getting English peas for the seeds to eat will take longer. Hope for a long fall and gradual onset of true winter.
