Would I be nuts to can nuts?

Q:

I have purchased two 12 oz packages of nuts , I want to can them, can you tell me what size canning jars that I will need?

A:

We recommend against canning nuts. The National Center for Home Food Preservation has an explanation. They suggest heating nuts gently (so they don’t brown or burn) to fully dry and then storing in sterilized containers. Vacuum sealing them once fully cooled is also a way to keep them from reabsorbing moisture from the air and slows rancidity that would happen faster if they are exposed to oxygen. Nuts can be frozen, but make certain they are packaged well so they don't dry out in the freezer.
