My spring bulbs are sprouting now in November, what should I do?

Your bulbs are fine. We have had such a mild fall that they think it is spring! In most cases they will stop growth once the cold hits. The winter rains will nourish the roots and the bulbs will pull what they need from the soil. They will continue to grow when it warms up again - sometimes as early as February. Here is a link with some additional information: Go underground with bulbs for colorful spring bloom.
