Would I be nuts to can nuts?

We recommend against canning nuts. The National Center for Home Food Preservation has an explanation in their article Whatever happened to canning nut meats? They suggest heating nuts gently (so they don’t brown or burn) to fully dry and then storing in sterilized containers. Vacuum sealing them once fully cooled is also a way to keep them from reabsorbing moisture from the air and slows rancidity that would happen faster if they are exposed to oxygen. Nuts can be frozen, but make certain they are packaged well so they don't dry out in the freezer.
