Fermentation crock

Fermentation crocks are designed for fermenting pickles and sauerkraut. There are two different styles of crock, the open crock and a water sealed crock. The open crock is the more traditional of the two styles and what you often find at secondhand stores and yard sales. The crock is completely open on top. A water seal crock has a shallow gutter on the top that gets filled with water and a lid that nestles inside the gutter. The water in the gutter creates a seal with the lid that prevents outside air from entering the crock but does allow carbon dioxide created during the fermenting process to escape.
