Biography
Stephanie is an Associate Professor of Practice in Oregon State University College of Health, in the program area of Extension Family & Community Health.
She is a Registered Dietitian Nutritionist and holds a Master's degree in Public Health Nutrition and is a Diplomate for the American College of Lifestyle Medicine. Her credentials also include Certified Health Education Specialist, Certified Health and Wellness Coach and Fellow of the Academy of Nutrition and Dietetics.
With a specialty in plant-based nutrition, Stephanie creates educational classes and written materials highlighting the importance of consuming more plant foods high in nutrient density and low in Calories. Plant-based diets are recommended to reduce risk factors associated with cardiovascular disease, type 2 diabetes, cancer, autoimmune disease, obesity and several forms of dementia. Diets that center around plant foods are also associated with disability-free longevity.
