2026 Linn & Benton Food Preservation Classes & Events

This summer Linn and Benton County Extension service is offering several great hands-on classes presented by trained faculty and Master Food Preserver volunteers. Classes are offered in Corvallis at various locations, and in Tangent at the Linn County Extension office. All classes will be held on Saturdays.

Benton County Fairgrounds is located at 110 SW 53rd St, Corvallis.

Linn County Extension office is located at 33630 McFarland Rd, Tangent.

  • 5-16-26 Preserving Fruit: Jams, Jellies, and Pie Fillings, Transform fresh fruit into delicious jams, jellies, and pie fillings! Discover the science behind fruit pH, and learn foolproof methods of preserving jams, jellies, and pie fillings, using both boiling water and steam canner methods with the Linn and Benton County Master Food Preservers. June:

  • 6-20-26 Preserving Vegetables: Pickling and Fermentation, Learn the art of preserving vegetables and fruits through quick pickling and traditional, probiotic-rich lacto-fermentation. Learn to create crunchy, tangy, and safe homemade pickles, kimchi, or kraut while mastering essential techniques, brine ratios, and food safety basics with the Linn and Benton County Master Food Preservers. July:

  • 7-18-26 Pressure Canning - Veggies, Are you wanting to pressure can but a little nervous using your pressure canner? Join us as we walk through how pressure canning works, including each step involved in safely canning vegetables. Includes free pressure canner dial gauge test – bring your canner lid or just the dial gauge if you have one. Get hands-on experience canning low-acid vegetables like green beans, carrots, and peas. Zion Lutheran Church kitchen, 2745 NW Harrison Blvd, Corvallis. Cost $16

August:

  • 8-15-26 Pressure Canning - Proteins, Are you wanting to pressure can but a little nervous using your pressure canner? Join us as we walk through how pressure canning works, including each step involved in safely canning vegetables, meats and seafood. Includes free pressure canner dial gauge test – bring your canner lid or just the dial gauge if you have one. Get hands-on experience canning protein like beans and chicken. September:

  • 9-19-26 Tomatoes & Salsa, What to do with all those tomatoes? Come learn the science behind today’s safest and most effective preservation methods. Learn the essentials of canning, freezing, and drying tomatoes and salsa, including tips on handling peppers and selecting ingredients for optimal texture. Get hands-on experience creating items like canned whole tomatoes, sauces, and salsas. Benton County location TBD. Cost $16

October:

  • 10-17-26 Tomatoes & Salsa, What to do with all those tomatoes? Come learn the science behind today’s safest and most effective preservation methods.
